Ingredients:
4 boneless, skinless chicken thighs
1 tbsp all-purpose flour
Salt and pepper, to taste
2 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 tsp red pepper flakes (adjust to taste)
1 tsp dried oregano
1 cup chicken stock
1 cup heavy cream
1 tbsp tomato paste
1 tbsp Dijon mustard
½ cup sun-dried tomatoes, chopped
1 ½ cups spinach, chopped
Zest of 1 lemon
½ cup grated Parmesan cheese
1 cup fresh basil leaves, shredded
Instructions:
Season both sides of the chicken thighs with salt and pepper. Lightly coat them in flour.
In a large frying pan, heat butter and olive oil over medium-high heat. Add the chicken thighs and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and set aside.
In the same pan, add red pepper flakes, oregano, and minced garlic. Sauté for about 30 seconds until fragrant. Add tomato paste and Dijon mustard, cook for another 30 seconds.
Pour in the chicken stock to deglaze the pan, scraping up any browned bits from the bottom.
Stir in the heavy cream, sun-dried tomatoes, chopped spinach, and lemon zest. Let the sauce simmer for 2-3 minutes until slightly thickened.
Add ½ cup of grated Parmesan cheese to the sauce, stirring until well combined.
Return the chicken to the pan along with any juices. Spoon some of the sauce over the chicken. Let it simmer gently in the sauce for another 2-3 minutes until heated through. Taste and adjust seasoning with salt and pepper as needed. Stir in shredded basil leaves.
Garnish with additional fresh basil leaves and serve hot.
