Martin Yan Explains Why He Loves Induction Cooking :
Last month, Celebrity Chef Martin Yan joined over 200 Santa Clara County residents for a free cooking experience, complete with tastes of honey-glazed lemon chicken and an opportunity to experience the power of induction cooking live.
While Chef Yan cooked up some of his signature recipes, like a steamed fish filet with miso glaze, he also debunked myths about “wok-hei,” an essential feature of Cantonese cooking. Yan asserts that the smoky, charred aroma and flavors can, in fact, be achieved using induction. Guests left with a newfound appreciation of induction cooking and many resources to inspire their own electric journey.
The live induction cooking experience was made possible by a collaboration between The Switch Is On, BayREN, County of Santa Clara and the City of Cupertino.
