Ohinteresting! He might have inadvertently explained why Chinese people can seemingly eat all sorts of rice-based dishes and still remain healthy and skinny for the most part.. He recommends taking your rice and putting it in the fridgefor a day or two, but what that does is create a process called resistant starch. It actually turns the starch into healthy as opposed to fat, and it makes it really good for your gut biome. You can do a Google search for resistant starch and learn about it.

I think most poor folk do. A "pinch" of something is common in recipes written in English, for example.
