I used less sugar, and substituted Sambuca with Rum. Alcohol is optional Serves 10-12 people Meringue 6 egg whites 375g caster sugar 80ml water Heat sugar and water in saucepan til it reaches 115C Before it reached temperature, whisk egg whites on high speed until they become foamy. Slowly drizzle in the syrup in while whipping the whites and continue to whip for 5 more minutes after you pour the syrup in.

Mascarpone 2 egg yolks 90g caster sugar 1kg mascarpone 30ml Strega liqueur (optional) 30ml Rum (optional) 250 ml espresso freshly brewed 48 Pavesini biscuits Whisk egg yolks and sugar on high speed until very pale and creamy. Then add the mascarpone and optional Rum and Strega. Whisk for another 2 mins. Fold the meringue into the mascarpone mixture little by little, being very gentle. Sugar syrup +coffee 150g caster sugar 250ml water Dissolve by warming in a pot and then add 250ml fresh brewed coffee and 1 tsp cocoa powder to dip the biscuits in

Line dish/bowl with soaked biscuits, layer with mascarpone mixture and sprinkle some cocoa powder on top. Repeat with soaked biscuits, mascarpone mixture and cocoa until all used up. Let it sit for as long as possible in the fridge, overnight is ideal. You can prepare a couple days in advance. And Enjoy!
