Hi everyone, today I'm sharing a matcha financier that's easy to make and perfect for tea time. It uses only egg white, so you can use carton egg white or the left overs from making pastry cream. I used candied black bean in it as it's a very popular pairing in Japan, but if you can't find candied black bean, skip it and the financier will be just as good!

Butter 58g
Candied black bean 15pcs
Almond powder 25g
Pastry flour 27g
Icing sugar 40g
Matcha 3g
Egg white 58g
Honey 10g
Make browned butter by heating the butter in a small sauce pan until the color becomes light brown, pour out from the pan immediately to prevent overcooking. Set aside to cool.
Preparation: Cut each of the black beans in half, set aside. Spray the financier mould with baking oil and set aside. Preheat the oven to 180C. In a bowl, mix all the powder, pastry flour and icing sugar together and set aside.
In a mixing bowl, add honey to egg white and mix until the honey is dissolved. Sift the powders into the egg white and mix until homogenous. Add warm butter (40C) to the batter and mix until homogenous. Fill each mould until 90% full and add three pieces of black beans in each mould.
Bake in a preheated oven 180C for 13min or until the edges are golden.
Remove from mould to cool. Serve warm or room temperature.
