I love eggs, of all types. A pickled egg is such a good snack to keep on hand and these Cajun style might be my favorite. Definitely worth trying and they are super easy!

Recipe (Single Serving):
10 to 12 boiled peeled eggs
1 cups vinegar (I went vinegar heavy)
1 cup water
1 tsp Cajun seasoning (to taste)
1 tsp sugar
1 tsp canning salt
Mix the above for the brine
Add to jar:
1/4 cup sliced onion
2 garlic cloves
1 sliced jalapeño
1 tsp dried dill (I skipped this)
1 tsp hot sauce (I used red pepper flakes)
1 tsp pepper corns
