I prepped my breakfast and lunch for 5 days. I add some homemade hot sauce to my breakfast after I microwave it in the morning. I will share that hot sauce recipe when our garden peppers are ready this year. I add ranch to my salads the day of. I don't use plastic to-go ramekins, unless I am meal prepping for Tyler to take to work.

BREAKFAST
2 sweet potatoes, peeled & chopped
1 onion, peeled & chopped
1 red bell pepper, seeded & diced
olive oil
salt & pepper
Mix all ingredients together on sheet pan. Roast in oven at 350 degrees for about 30 minutes. Let cool completely.
10 eggs, whisked together
5 tbsp butter
salt
Melt butter in skillet over medium heat, reduce heat to med-low and add eggs. Scramble eggs to your preferred doneness. Add salt and mix in. (Do not add salt before cooking eggs.) Remove from heat and let cool completely.
10 slices turkey bacon, or regular bacon :)
Cook bacon according to package. Let cool completely.
Separate sweet potato mixture, eggs, and bacon into 5 servings. Refrigerate until ready to use.
On the morning of, remove bacon. Microwave sweet potato/eggs 30 seconds. Stir and add cheese of your choice. Add bacon back to plate and microwave everything another 30 seconds. I add hot sauce because hot sauce is everything. Enjoy :)
LUNCH
1 english cucumber, peeled and sliced
cherry tomatoes, halved
3 chicken breasts, trimmed
blackened seasoning (recipe below), or your favorite seasoning
butter lettuce
spinach
blue cheese crumbles, or cheese of your choice
dressing of your choice
Season chicken breast with blackened seasoning. Bake at 350 degrees for 25 minutes. Layer lettuce, spinach, cheese, cucumbers, and tomatoes in meal prep containers. Let chicken rest a few minutes before slicing. Divide into 5 servings in containers. Refrigerate until ready to use. Add dressing the day of. I keep the chicken separate so I can microwave it the day of.

Blackened Seasoning Ingredients:
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon chipotle pepper
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 teaspoon ground pepper
1 teaspoon Kosher salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
