Disclaimer: These are some foods I consumed when I was iron deficient + I had to take iron supplements. Professionals meticulously checked and guided me to meet my iron needs. Consult your nearest healthcare provider if you suffer from iron deficiency anemia.

➤ Lentil burgers
-2 cups dry lentils (on instapot, stir-fry lentils and then cook for 30-35 minutes)
- bay leaves + garlic gloves
- 1/2 finely chopped onion
- 1-2 handfuls of spinach
- 2/3 cup oat flour
➤ Bean TACOS with BEETROOT tortilla
beetroot tortilla:
- 2 cups of Mazeca
- 1 beetroot (blend in with 1/3 cup water)
- salt
☞ Mix the ingredients with your hands until you have a masa consistency. Let it sit for 30 minutes to 1 hour and make your tortillas!
Filling
- 1 cup black beans
- 2 tomatoes, chopped
- 1/4 green pepper, chopped
- 1/4 yellow pepper, chopped
(add as much color of peppers as you want. Live, laugh, love vitamin c)
- 1/2 chopped onion
➤ Bean salad
- 1- 1/2 can of beans
- 1 can peas
- 1/2 onion (white or purple)
- 1 handful of cilantro
*paired it with lemon!
