Ingredients & Notes 🌟
#1 Savory Leftover Pancakes 0:18
1 bell pepper, roughly cut
1-2 spring onions, roughly cut
75g-100g firm tofu, cut into strips (2.6oz-3.5oz)
veg oil for the pan
1 cup flour (120g)
½ tsp salt
2 tsp baking powder
¾ cup water (180ml)
→ yields 4-5 pancakes
#2 Go To Lazy Pasta 2:03
1 serving pasta/noodles (70g-120g = 2.4oz-4.2oz)
pinch of salt for the water
1 cup (250ml) store bought tomato sauce
1 heaping tbsp hummus
1 ladle pasta water (about ⅓ cup = 80ml)
salt, spices to taste
roasted sesame seeds, fresh herbs for the top
→ serves 1
#3 Vegan Tuna Bowl 3:13
1 can chickpeas, rinsed (400g = 14oz)
1 tbsp vegan mayo
1 tbsp vegan sour cream/unsweetened yogurt/vg cream cheese
2 tsp gochujang (or to taste)
1 tbsp rice or white wine vinegar
¼ tsp salt (or to taste)
1 small onion (red or green), chopped
1 sheet nori, ripped to shreds
serve with:
1 serving rice, fried until crispy if preferred
fresh bread and some cucumber, tomato
#4 Instant Noodle Salad (chatpate) 4:50
1 packet instant noodles*
1 tsp sunflower seed or olive oil
pinch of salt
pinch of paprika or chili powder (optional)
½ cucumber chopped (deseeded if preferred)
1 small onion (red or green), chopped
1 green chili (or up to 6 i guess lol)
1 large handful cilantro, chopped
juice of 1 lime
1 handful fresh baby spinach
2-3 tsp crispy chili oil (or to taste)
sriracha to taste (i skipped it)
1 avocado, chopped (optional but HIGHLY recommend)
1 tsp roasted sesame seeds
*i went for non spicy veg noodles

#5 Chickpea Crunch Bowl 7:10
1 can chickpeas, rinsed (400g = 14oz)
1 tbsp veg oil
generous pinch of oil
seasonings of choice
60g (⅓ cup) dry couscous
1 tsp olive oil
pinch of salt
seasoning mix of choice
100ml hot boiling water (⅓ cup plus 2 tbsp)
~3 tbsp vegan sour cream
1 handful fresh herbs, chopped
1-2 tsp oat milk, if needed
salt, pepper to taste
1 handful cherry tomatoes, chopped
1 spring onion, chopped
→ serves 1
