It is becoming a lost art and that is what they are trying to preserve at the University of Kentucky. This year (2018) the UK Department of Animal and Food Sciences offered meat cutting classes for both beef and pork to the general public and the response was overwhelming. The three day class for both beef and pork, which were offered separately, had all the available spots filled with participants coming from as far away as Alabama and North Carolina.
