INGREDIENTS (for two people):
- 200 g of firm tofu
- 4 cloves of garlic
- 2 tablespoons of Taggiasca olives in oil
- 1 untreated lemon
- thyme
- parsley
- extra virgin olive oil
- salt and pepper
PROCEDURE:
- Drain the tofu well and pat it dry with a clean cloth.
- Start grating it using the large round holes of the grater and transfer to a baking sheet lined with parchment paper. Season with a pinch of salt, a grind of pepper, a drizzle of oil, a few thyme leaves and the crushed garlic. Mix and cook in a hot fan oven at 190°C (alternatively you can use a static oven at 210°C or an air fryer).
- Cook for about 10-15 minutes, stirring halfway through. It will be ready when it starts to turn golden and some pieces will have a bit of a crust.
- Chop the pitted olives and fresh parsley.
- Remove the tofu from the oven and season with the olives, lemon zest and parsley, mix well everything together and serve with the vegetable side dish of your choice.
