Meskouta (Moroccan Orange Cake)
A traditional orange and yogurt cake served for tea or breakfast. Easy to make.
1 cup = 250 ml
Ingredients:
All purpose flour-2 cups ( 260g)
Baking powder-1&1/2 teaspoon
Salt-1/2 teaspoon
Egg-4 ( at room temperature)
Sugar-1 &1/4 sugar- 250g
Orange zest -1 tablespoon
Oil- 1/2 cup (110 ml)
Orange juice-1/2 cup (110 ml)
Yogurt-1/2 cup
For glaze: (optional)
Orange juice-1/2 cup
Powdered sugar- 1 or 2 tablespoon
Method:
Sift flour, Baking powder and salt. Mix and keep aside.
Beat egg for 1 minute. Then gradually add the sugar.
Whisk until pale and fluffy,
Add oil, orange zest and yogurt.
Add the flour mix in 2 or 3 batches. Gently mix until combined.
Prepare the baking pan. Spread butter and dust with flour.
Transfer the batter into the pan.
Bake in a preheated ( 170C for 10 minutes) oven at 170C for 45-5-0 minutes or untill the cake is done.
Mix orange juice and sugar and brush over the cake.
