Becoming a mother is a very special time in a woman’s life. And to eat well during this time is very crucial. The meals need to be balanced, nutritional and filling. The khichdi is all of those things and delicious as well :)
This recipe contains a masala that can be used in multiple dishes and a khichdi using the said masala.
Ingredients for the masala :
1 bowl Coriander seeds
3 Cinnamon
2 Cardamom
2 Jaipatri (Nutmeg Mace) /Jaiphal (Nutmeg)
10-12 whole Black Pepper
2 tbsp Fennel seeds
Method :
1. Heat a pan on low flame.
2. Add the coriander seeds and lightly roast them. Add the rest of the ingredients and lightly roast till you hear a crackling sound.
3. Grind the roasted ingredients into a fine powder
Ingredients for khichdi :
1 bowl washed rice (when cooking for expecting mothers always use older rice. Preferably ambe mohar or indrayani.)
1/2 bowl of sprouted Methi seeds (to sprout the methi seeds, soak them in water overnight. In the morning strain them and cover with a cloth and let it sit in a warm area for 5-6 hrs.)
1 onion
1 piece of dried coconut
2 kokums
2 bayleaves
2-3 black peppers
2-3 smashed garlic cloves
1/2-2 finely chopped onions
2 tbsp ginger garlic paste
Lemon sized jaggery
2-3 tbsp coconut milk
Salt
1 tbsp red chilli powder
1/4 tbsp turmeric
1 tbsp of the masala previously made
Method :
1. On a over-the- stove net or with tongs roast one onion and the dried coconut till they blacken.
2. Cut the roasted onion roughly and grate the dried coconut.
3. Grind them together
4. Place a cooker on the stove (you can make this khichdi in an open pan too, make sure to add more water to the khichdi to cook the rice well.)
5. Add 3 tbsps ghee (Always use pure ghee when cooking for expecting mothers.)
6. Add garlic, black pepper and bayleaf
7. Add thinly chopped onions and saute till they turn pink
8. Add the ginger garlic paste, 1/4 tbsp turmeric, 1 tbsp red chilli powder
9. Add the sprouted methi seeds (methi seeds are high in calcium and iron. They help in the production of milk in expecting mothers.)
10. To the uncooked soaked rice add 2 and 1/2 tbsp of the roasted onion and coconut masala, 1 tbsp of the previously made masala.
11. Add 1/4 tsp salt to the cooker and 1/5 tsp to the soaked rice
12. Mix the ingredients onto the soaked rice (pre mixing soaked rice before cooking it ensures that all ingredients get evenly applied to the rice.)
13. Add the soaked rice to the cooker and mix well
14. Add 1 kokum, jaggery and mix well (don’t use sugar while cooking for expecting mothers replace it with jaggery or honey or date powder.)
15. Add 3 tbsp of coconut milk
16. Add 4 and 1/2 bowls of water
17. Cover the pressure cooker, let it cook for 3 whistles, turn the flame down and wait for the vapour to escape before serving.
