Today we bring you Methi Recipe Recipe. This Mathri Recipe is one of the tea-time snacks recipes which is loved by every Indian Household. This Methi Mathri recipe is very easy to make and requires very little time. This Masala Mathri Recipe is made in India during the festive season, mathri is especially common in North India. Dried fenugreek leaves known as kasuri methi is used to flavor a number of Indian dishes and they are used in this mathri too and hence the name Methi Mathri. These are also flavored with ajwain (carom seeds) and black peppercorns. Making mathri is actually quite easy. The most common problem you will face if you have not made it before is that your mathri won’t turn out crispy. And there’s only one reason for that - your oil while frying the mathri was too hot. Mathri should always be fried at medium heat, only then it will turn crispy and crunchy. So make sure your oil temperature is perfect, you don’t want smoking hot oil for these! Make methi mathri for Diwali, Holi and enjoy with them a hot cup of chai!
Ingredients: for Methi Mathri:-
For Dough-
2 CUPS/400 GRAMS REFINED FLOUR (MAIDA)
1/2 CUP SEMOLINA (SOOJI)
SALT TO TASTE
1 TSP CAROM SEEDS (AJWAIN)
1 TSP CRUSHED CORIANDER SEEDS
1/2 TSP TURMERIC POWDER (HALDI)
1 TSP CHAAT MASALA
3 TBSP DRIED FENUGREEK LEAVES (KASURI METHI)
100 GRAMS CLARIFIED BUTTER (DESHI GHEE)
WATER AS REQUIRED
For Frying-
VEGETABLE OIL
Method:-
Take refined flour in a bowl and add all the dry ingredients and mix them together.
Then add clarified butter and mix it properly by hand.
When it binds together and is crumbled in texture then start kneading the dough by adding water.
Remember do not add a lot of water at once.
Make a stiff dough.
When it's done keep it in an airtight container and rest it for 30 minutes
After 30 minutes knead the dough further for 2 to 3 minutes.
Then take small portions of dough and start making mathris by pressing it with your hands.
Size should be as per choice.
You can also use a rolling pin.
Make the mathris with all the dough.
Now Heat up the oil.
Remember oil should be medium hot.
Then add the mathris in it and start frying until they turn light golden brown in color.
The flame should be medium-low while frying the mathris.
Once done take them out on tissue paper.
Enjoy these delicious mathris with tea or coffee.
