酸奶芒果芝士蛋糕,是一款免烤蛋糕,可作爲炎炎夏日一道口感清涼的甜點。
注意:
1、吉利丁溶液混入芝士糊容易凝結起粒,所以最好是和打好的淡奶油一起混合進芝士糊裏。
2、做這個蛋糕最好用無底蛋糕圈,脫模時用熱毛巾敷一下蛋糕圈就很容易脫模而且蛋糕漂亮。因爲我用的是活底蛋糕模,裏面不平整,所以用了硅膠片,但脫模有點困難,蛋糕的邊緣也不夠平滑。

Note:

2. It is best to use a bottomless cake ring to make this cake. Applying a hot towel to heat the cake ring when you take mold out, and the cake is beautiful. Because I used a live bottom cake mold, the inside is not flat, so I used a silicone sheet, but it is a bit difficult to take out, and the edges of the cake are not smooth enough.
成份:(8寸圆蛋糕模)
蛋糕底:
100g 餅乾
50g融化的無鹽牛油
芒果泥:(90g混合芝士糊,250g做芒果啫喱層)
340g芒果
20g糖
1茶匙檸檬汁
芝士層:(取300g做最上面一層,餘下的做下層)
400g 奶油芝士(室溫)
80g 糖
150g酸奶(室溫)
2茶匙檸檬汁
1個檸檬皮
3茶匙吉利丁粉
30g熱水
190g 35%淡奶油
20g糖
90g芒果泥(混合在下層的芝士糊裏)
芒果啫喱層:
30g熱水
2茶匙吉利丁粉
250g 芒果泥
Recipe:(8inch around cake pan)
Bottom of cake:
100g biscuits
50g melted unsalted butter
Mango puree:(90g for cheese paste, 250g for mango jelly)
340g mango
20g sugar
1tsp lemon juice
Cheese layer: (take out 300g for top layer, the remaining for lower layer)
400g cream cheese (room temperature)
80g sugar
150g yogurt (room temperature)
2tsps lemon juice
1 lemon zest
3tsps gelatin powder
30g hot water
190g 35%whipping cream
20g sugar
90g mango puree(mix into cheese paste of the lower layer)
Mango jelly layer:
30g hot water
2tsps gelatin powder
250g mango puree
