The noodles in that curry are Thick Bee Hoon (粗米粉 cū mǐ fěn), referring to Thick Rice Noodles. In English this is often translated to Vermicelli, but without specifying thick 粗 (cū), you will be likely be served the thin hair like version (细米粉 xì mǐ fěn). At most soup based noodle stalls (think Fishball noodles, Prawn noodles, Laksa, Banmian), you will very often be offered: - Yellow noodles (黄面). Alkaline noodles, also referred to as "Mee" - Thick Bee Hoon (粗米粉) - Thin Bee Hoon (细米粉) Sometimes other variations too (Silver needle 老鼠粉, Hand torn 面粉粿, Chinese style lamian 拉面) By default, Laksa is often served with Thick Bee Hoon, and Curry noodles are served with yellow noodles. But you can actually ask to mix noodle types, e.g. yellow noodles + thin beehoon. It's down to personal preference at the end of the day though, Bon Appétit!!

Fantastic! Really got into the heart of Singapore hawker food here. Really bums me out sometimes when “Singapore noodles” in America or Europe - a total concoction 😂 - is all that is known, when there are so many sensational noodle dishes here!
