Wow the amount of dough at the beginning is insane! Love how you're doing well, been following you along with my own sourdough journey. I had to make another starter recently as I forgot to bring it to France and I've successfully made my first loaf 🙌

Hi Lily, Lucho here, from the RM crew! A few things from what I've heard in your Q&A!. 1: Thanks for everything you share, maybe I saw the RM for the first time in your videos, I've been in the group for 2 months now and it changed my baking life for good. Same as you, as a self taught baker, if I had a doubt pre chat group, it was harder to get answers, in the last 2 months it really unlocked so much knowledge, I love it in there!. 2: in regards to inspection, maybe every council is different, but here in North Devon, if it is domestic premises, they'll have to tell you when they are coming, they don't just show up. I've been inspected 3 times already and always knew when. 3: About profitability, I'm similar to you, but I love alone with my partner, and we manage to pay rent an everything, although she works as well, and she's trying to grow her own business, but we've had some months that she work very little and the biggest amount of income came from my bakery. ND is way cheaper than London of course, but it is profitable, although it is hard work as you know! 4: I absolutely get you on burnouts! For me are big markets, I love them and I can get very good income from them, but dear me, they are hard work to prepare, mostly because of lack of room!. hey Lucho, thanks so much for your comment!! Team RM2020 are just amazing and it's such a fantastic resource isn't it?! Such a comfort... yes, I think you are right in terms of the inspection; they do have to call/ warn you before of their arrival and set a date, but always have to be "Ready". Markets are always exhausting for me too... I have found it gets easier, but even so, I am completely whacked come 2pm so it's important to keep the day free for rest. Lily, so great to see you again! I doubt I will be able to start my own micro bakery but I have friends that love my bread. That is a beautiful thing and it's a great reason to bake - to meet needs. One never knows if they will get the opportunity to run a small business side hustle, though.

Hello, where did you get the proofing baskets at? I have not seen those before. Just a home baker but would like to not use these cloth ones I have anymore. Keep it up

hey Katy! my pleasure - I made a video a long while back on my initial startup costs here: kzitem.info/news/bejne/r32emIGJsF-am6w which were at roughly 6k for my rm2020 oven, island unit, baskets, 1st fridge, mixer, flour barrels, cooling rack, ingredients etc. Since then I've sold equipment and have been re-investing more money into the business made through deliveries, farmer's markets, wholesale work etc. for my convection oven, a second fridge and any further costs. Hope this helps!

oh and I am hesitant to take out a bank loan... I intend to crowdfund for initial start up costs as soon as I've found the right space :)
