Methi Bajri Dhebra
Ingredients:
1. Bajra (pearl millet) flour 3cups
2. Chopped fresh methi (fenugreek) leaves1/4th cup
3. Chopped fresh coriander leaves 1/4th cup
4. Green chilies, finely chopped 1
5. Chopped fresh garlic leaves 1/4th cup
6. Turmeric powder 1tsp
7. Red chili powder 1/2tsp (adjust according to taste)
8. Cumin-coriander powder 1/2tsp
9. Asafoetida (hing) 1/2tsp
10. Salt to taste
11. Water (as needed)
12. Ghee/Oil
Instructions:
1. In a mixing bowl, combine bajra flour, chopped methi leaves, chopped coriander leaves, green chilies, chopped garlic leaves,turmeric powder, red chili powder, cumin-coriander powder,hing,oil and salt.
2. Gradually add water and knead the mixture into a smooth dough.
3. Take a ball of dough, flatten it between your palms, and then roll it out into a round disc,as shown in the video.
4. Heat a tawa over medium heat, grease it with ghee and place the rolled dhebra on it.
5. Cook on both sides until golden brown, applying ghee/oil on both sides while cooking.
6. Remove from heat and repeat the process with the remaining dough.
Serve hot with yogurt, pickle, or any chutney of your choice.
