Minced Meat Pide Recipe
Introduction
Welcome to Elif's kitchen. Today, I want to share with you a recipe for minced meat pide that we often make at home, and I'm sure it will become one of your favorite recipes once you try it.
Ingredients
*For the dough:*
- 1 cup warm water
- 1 cup warm milk
- 1 teaspoon sugar
- 1 packet instant yeast
- 1 tea glass of vegetable oil
- 4 cups of flour
- 1 teaspoon salt
*For the filling:*
- 1 large onion
- 5-6 green peppers
- A few sprigs of parsley
- 2 medium tomatoes
- 400 grams medium-fat minced meat
- Half a tea glass of water
- Quarter tea glass of vegetable oil (optional)
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- Half a teaspoon black pepper
*For the top:*
- 2 egg yolks
- Butter or margarine
Recipe
1. *Preparing the Dough:*
- Take 1 cup of warm water and 1 cup of warm milk in a mixing bowl.
- Add 1 teaspoon sugar and 1 packet instant yeast, and mix.
- Cover and let it sit for 10 minutes.
- Add a tea glass of vegetable oil and gradually add 4 cups of flour, mixing.
- When the dough comes together, remove the spatula and knead the dough until it is soft and non-sticky.
- Knead the dough well on the counter.
- Place the dough back in the mixing bowl, cover it, and let it rise in a warm place for about 1 hour.
2. *Preparing the Filling:*
- Process 1 large onion in a food processor until finely chopped, and place it in a mixing bowl.
- Process 5-6 green peppers and add them to the bowl.
- Process a few sprigs of parsley and 2 peeled medium tomatoes together, then add to the bowl.
- Add 400 grams of minced meat, half a tea glass of water, and if using lean meat, a quarter tea glass of vegetable oil.
- Add 1 teaspoon salt, 1 teaspoon red pepper flakes, and half a teaspoon black pepper, and mix well.
3. *Preparing the Pides:*
- Punch down the risen dough and place it on the counter.
- Divide the dough into 15 equal pieces, about the size of a mandarin.
- Roll the pieces into balls and place them on a floured plate, covering with a plastic bag to prevent drying.
- Sprinkle some flour on the counter and roll out the dough into an oval shape.
- Spread about one and a half tablespoons of the filling on the dough.
- Fold the edges to form a pide shape and place it on a baking tray lined with parchment paper.
- Brush the tops with egg yolk and bake in a preheated oven at 230 degrees Celsius until golden brown.
4. *Baking:*
- Bake the pides for about 10-15 minutes until both the top and bottom are golden brown.
- After removing from the oven, brush with butter or margarine and serve hot.
Tips
- Add the flour gradually to achieve the right dough consistency.
- Make sure the vegetables are finely chopped for the filling.
- Adjust the baking time according to your oven to avoid drying out the pides.
