Even as a professional baker I push myself sometimes it just doesn't work out. The times when your cake will fall down your icing will run and your fondant will crack. These are the times where you just want to throw down the towel and scream at the baking Gods why me.
But after all these years the number one thing I've learned is how to get back up and keep going.
You have to tweak the recipe or learn how to cover up those cracks in the funded and been able to get the final results that you are looking for.
