Preparation
1. Combine sifted flour with salt and baking powder, mix.
2. Beat soft butter with a mixer for a minute, add sugar and continue beating for 2-3 minutes.
3. Add eggs at room temperature, one at a time, beating well after each addition.
4. Add lemon juice and stir. Finally, add the finely grated zest of one lemon.
5. Add the flour mixture in several steps, alternating with milk.
6. Add the coconut flakes and stir.
7. Transfer the dough to a pastry bag, for traditional forms, you can use an ice cream spoon.
8. Fill in the forms 3/4 full. Use a spatula or spoon to make a depression in the center.
9. Bake in an oven preheated to 160 ° C on a medium level without convection for 30-40 minutes.
10. Cool slightly in a mold, then remove onto a wire shelf and cool completely.
11. For the glaze, combine the icing sugar with small portions of lemon juice to the desired consistency.
12. Cover muffins with icing and sprinkle with coconut.
