Mint Pulao (Pudina rice)
Ingredients:
Basmati rice - 1 1/2 cups (soaked for 20 mins)
Mint leaves / Pudina - handful
Coriander leaves - handful
Onion - 2
Tomato - 1
Green chillies - 3 nos.
Garlic - 2 cloves
Ginger - 1 inch sized piece
Coconut milk - 1/2 cup
Garam masala - 1 tsp
Oil/ghee - 3 tbsp
Spices (Cloves - 2, Cinnamon - 2, Cardamom - 2, Bay leaf - 1, Cumin seeds - 1 tsp, Pepper corns (whole) - 1 tsp)
Cashews - 10 nos.
Salt - as required
"𝑶𝒉 𝑾𝒐𝒘" 𝑹𝒆𝒄𝒊𝒑𝒆:
1. In a blender, add the mint leaves, coriander leaves, ginger, garlic and green chillies and blend them well.
2. In a pressure cooker, heat oil/ghee and add all the spices. Sauté for a minute. Add the cashews and sauté until golden brown. Then, add onions and sauté until they are transparent. Add the tomatoes and sauté until mushy. Then, add the blended mixture, salt, garam masala and coconut milk and cook for 5 mins.
3. Add 1.5 cups water and bring it to boil. Add the soaked basmati rice and gently stir. Cover and cook on low heat for 15-20 mins. Allow it to cool down. Alternatively, you can also pressure cook the rice for 1 whistle.
4. Enjoy the mint pulao with curd/raita!
