I love these "after more extensive use" reviews because sharp out of the box is easy... sharp and comfortable after a lot of use is how a good knife pulls out ahead of a piece of crap.

100% agree my man! Out the box, most knives can be "impressive" new. But whether or not it actually holds up can only be told through time under use. Hope you are well! 😃

I got the short version of the chef's knife as well as this Santoku + the utility knife a couple months ago, and I am extremely pleased with them all. I am really glad I got the short chef's knife. It's extremely aesthetic, I absolutely love the geometry and the feel in the hand. If you have the short chef's knife, I think a very helpful video would be comparing it with the full sized Misen chef's knife. Almost no one on KZitem has video reviews of the short version, so I bought it blind and hoped for the best. Fortunately I ended up loving it, but it would have been REALLY helpful to have a comparison video of short vs regular. Just to see the geometry, weight, balance, thickness, and how they cut. I couldn't find a single comparison on the entire internet of the two knives. So if you have the short one, I think it would be a very useful video for prospective Misen customers

Not bad. With AUS-10 basically being 440C with less stain resistance and higher wear resistance and edge holding, I've found similar results in my Cold Steel folders made from the same material. It's good steel. I don't really care about patinas much. If it gets too bad, a little Flitz metal polish will bring the shine right back. I think I'll give one of these a try. The edge geometry is really what's selling me on it. Looks nice and thin from the factory, and I like not having to do too much grinding on the edge of a knife to make it good to go. Thanks for the review.

Agreed! I love aus10 for their performance. Takes a great edge with good edge retention but also easy to sharpen in comparison to some of the more higher end steel. This santoku is very thin and performs really well. One of my favorite production knives. Thanks for supporting the channel!! 😃🙏

@@BetweenTwoForks you're welcome. I've had the knife for about 5 days, still haven't really used it. It's definitely feels like a high quality knife. I like the handle a lot, it slices limes and paper beautifully right out the box.

Personally I slightly wish I had gotten the Zwilling Pro Slim that's on sale but I can't say I regret getting the Misen. Out of the box it's sharp enough but I was thrown off by the uneven edge, so i'll probably hit it on a whetstone a little bit sooner rather than later. Comparing it to the Babish 8in (After sharpening on 1K grit), I gotta say I prefer the Babish. I know Misen gives 60 day return window for full refund, so I'll have to use it for the next 30 days straight to see how much I want to keep it or not. Thank you for your reviews btw. Would love to see you do some budget knives like Babish, Mercer, maybe even cheap sad blades like Farberware and Cuisinart.

Can you try the material brand knife trio? It gets great reviews on Amazon with lifetime warranty but I haven’t found any videos on them

Hey! I haven't had a chance to get around to it but I did some research. They were pretty vague when it comes to the type of Japanese steel they use. So I'm taking a wild guess that it is Aus-8 or aus-10 steel. Looks like a decent knife. Better for rock cuts but the round handle shape might be a bit slippy. For that price point, the misen or the new hedley Bennet chef knives might be a direct competitor. The Misen santoku is one of my favorite knives. I actually pick it up over some of the more expensive Japanese knives lol. Tells you a lot 😃🙏

hey man, you got really great knowledge on your knifes, I will subscribe to support your growth, but once i bought this knife i really have no reason to continue watching knife videos, i feel like, if youtube is something you want to be very successful with i suggest expanding what you offer to your channel, give people a reason to stay invested and growth will happen, have a great day man

@@BetweenTwoForks i currentl have been interesting in improving my abilities in the kitchen, so any knowledge on that would attract my attention, i would focus on the things you enjoy talking about because that’s where you’re going to naturally do well in, i also would try to understand what components of the kitchen do people have demand for, for example, i believe cooking is the most viewed kitchen related topic on youtube, because that’s what people want to learn the most about, so maybe for you, if you have a specialized area of cooking, that might attract the right audiance for you

I don't know wut weird habits others has...but I've never had ANY patina problems with all my stainless blades... I eve nthrow them in the dishwasher and leave them in the sink for days...

Most definitely the santoku. Their santoku is paper thin. Really well done knife for the price point.

@@BetweenTwoForks I finally have both, and yes, Santoku is thinner on a spine, but both are really thin behind the edge, can't even tell the difference. I am really impressed how good and thin the grind is. Makes me concerned a bit, usually it is very difficult to make such grind on hard steels, they warp... Also I am not impressed on overall quality of Misen knives, can be better.... but anyway I am positive to recommend them, especially for a reasonable price they are offered.

I am honestly not a fan of cutco at all. So maybe I am not the best person to ask. I think they have a fantastic warranty. But outside of that, that's really about it. Their knives are not the best. They work a lot better after some after market modifications to the edge and grind. But not sure if that would void the warranty though. I will pick a misen over a cutco for sure.

@@BetweenTwoForks not sure how I ended up with cutco knife in my kitchen but it's really old and cutting just like any other old knife so was looking for a new one. Searching online and found that the set cost way way more than Misen. I'm not that good of a cook to invest that kind of money so Misen it is. Thanks.

Mine came and... I don't know enough about knives to really describe it but... the blade is NOT thin. It looks like an axe and I can only cut things by chopping, and not smoothly at all.

That doesn't seem right. If you ordered it from Misen, definitely reach out to their customer service and send them pictures. They will likely send you a free replacement. Hope you get it resolved!

Made the mistake of purchasing a Misen knife. First blade came with a scuffed up handle. Customer service process sucked. Very off-putting. Then the second blade came in the mail and the actual blade was ground down too much in the middle. Finally just asked for a refund. Horrible experience which I won't be repeating. Do yourself a huge favor and just pay the extra money for a good knife with a company that stands behind their product. Misen was so very disappointing. Refund took quite awhile. Cautionary tale to say the least.

Alex. I was really surprised to see that you had this sort of bad experience with Misen. I have purchased a bunch of their products, knives, cookware, and prep tools, and every one of them exceeded my expectations. I also gave several of their products to relatives and friends as gifts, and they have been universally satisfied with the products. That really sucks to hear! I've not had a bad experience dealing with their customer experience team or gotten a bad product from them. If you reach out through their Facebook page, I've found them to be much more responsive there. I do know that Misen have said that in the past, there was a bad batch of knives that got past their QC, so maybe you are one of the unlucky fews that got it. Either way, sorry to hear about your bad experience.

@@BetweenTwoForks this would be 2 bad batches. One knife was blue, and the other black. Both had production issues. I'm glad you had a good experience with their customer service team, but my experience was awful.

@@BetweenTwoForks I don’t know what DM is. 🤣Don’t make fun I was born and raised in Indiana but my wife and I met when we were 15 (31 now 4 kids) and the last type of social media we had was AOL Instant Messenger. Just grew as a family together never needed MySpace or Facebook. I will email you though I had a possible idea for a knife review video.
