why are using cream to mix while the rest are using water could you please explain bcoz i will using it as a savory pastry

Nancy gibbs, puff pastry has a high fat to flour ratio and would use only butter and require a lengthy folding process called lamination. The cream allows you to have the rich dough using a simpler method. For a savory use, omit the sugar. Thanks for watching!
