How long do they reuse those big cans (bamboo shoots)? You can see rust on the rim of those cans. Kitchen needs serious cleaning as well. Racks are coated in grease as well as those fan vents blowing over head. Well, I guess there's no time to do a thorough cleaning since they're open year-round.

I was in ChinaTown in Yokohama earlier this year. We were looking for somewhere to eat and my mom said, look for the Chinese restaurant with the biggest line.

I live in China, I'd like to see a similar video on a neighborhood restaurant here in China. There are many family run restaurants in my neighborhood in downtown Zhengzhou. The food is very affordable, and spicy.
we ate there 4 years ago - for me it was okay - not great - maybe it's changed in the last 4 years

They use a lot of canned items to save on shrinkage. I probably wouldn't do that but you would be surprised how many restaurants do it. Think nothing comes out of can at your Favorite white bread, margarine Bob Evans?

Not every restaurant can be an In N Out where it only serves one item single or double patty burger.
Some of the workers speak Chinese. This is really a Chinese restaurant. I am wondering why most customers are women. I feel hungry watching this video.
Can someone tell me why the water is left running right next to where they are cooking ? I have seen them sometimes spoon up some of the water but why not just have a pan of boiling water ?

the running tap serves multiple purposes, one of which is to cool the workstations which are exposed to extreme heat from the high power stoves, which is why they're left running, second is for quick rinsing of the woks and ladles, third is to use the water for cooking when required. my guess for not leaving water boiling is to make full use of the limited number of stoves they have to pump out as much food as quickly as they can, and since they already have their soup stock on constant boil anyway there was no point keeping another pot of plain water on the boil

That is a common practice when employing the Wok sink faucet. In between cooking cycles, the faucets are used to rinse and clean the Wok without having to fully lift them off the burners. After cleaning, the Wok is tilted to empty the rinsing water into the slot at the rear of the stove, which is a sink that flows down into a drain. It is typical to leave the faucet on during cooking cycles; as the flow of water prevents oils and food residual from building up in the sink or clogging the drains and pipes.

Wish there had been English subtitles available. Why did that restaurant attract so many young women? The food looks good. Happy for the waitresses upstairs that there was a food elevator.

Hi Nancy just letting you know that there are English subs now. See the problem is KZitem takes HOURS to upload the English so when you first watch the video, if your too early than YT won't have them ready. Best thing sadly is to wait at least 8-12 hours AFTER the video is posted. I find when you give it some time the English will be there :)

Luckily you don't need subtitles in the kitchen because when a kitchen is this quiet (I mean no talking) it is running like a clock!!! Everyone knows their job, are busy and concentrating!!! THIS IS A CHEFS DREAM

This is more like a japanese-chinese cuisine. A mix cuisine restaurant. But the food looks good bet they taste good too

한국 김치언니덜 마냥 매장안에서 한번에 백마들도 보고 밥도먹고 밖에 잘생긴 백마도 쳐다보고 이런거 거르고 오로지 한곳만 파는 습성 ,,,,눈앞에 밥맛 맛있게 먹는데 길들여 졌겠죠,,,,,,,

in a sense that's part of the magic, too, turning unfancy ingredients into irresistible dishes people happily queue and keep coming back for. and the magic does seem strong in this place, all the dishes looking great and all the customers looking happy as they dive into their food
