A summery and even more refreshing take on the #mojito. We take out a 1/2 ounce of our white rum and add an ounce of dry vermouth, which gives the cocktail a light herbaceous note and gives it a mildly bitter quality.
Fun fact: in small quantities, bitterness makes things taste more refreshing.
1.5 oz dry white rum
1 oz dry vermouth
3/4 oz lime juice
1/2 oz simple syrup
1-3 oz of club soda (to taste)
Mint sprigs
Gently muddle a few mint leaves and simple syrup in your shaker. Add lime, vermouth, and rum.
Add ice and club soda to a collins glass*.
Add ice to your shaker and short-shake it for 5-10 seconds, fine straining it into the glass. The fine strainer will catch any mint for a cleaner drink.
Add a straw and mint sprig to garnish
*In his book The Bartender's Manifesto, Toby Maloney recommends adding carbonation to glasses before the rest of the mixture, as it will bubble its way up through the drink, better dispersing the carbonation through the drink.
