Well, there's nothing out of the ordinary if you think that over 100 years ago, this cozonac, following grandma's recipe, started its ritual a day in advance, or maybe even more if you think about the cozonac ingredients.
I'll just say this, if you want a traditional Cozonac recipe, then you have to respect tradition, and that's what I did and tried to do.
A two-colored cozonac, a traditional cozonac, a kneaded cozonac, not like the trendy ones now, an unleavened cozonac. I made it just like grandma makes it every year, Fluffy and Fragrant Cozonac, and full of Turkish Delight.
No, it's not a recipe taken from Chef Sorin's cozonac, or whoever else, it's grandma's cozonac recipe, a cozonac that easily falls apart, a delicate cozonac, a fluffy, good, and delicious cozonac.
I made cozonac with walnuts, cozonac with scalded dough, the whole shebang, because this cozonac recipe with walnuts and cocoa, or rather this cozonac with sour cream and butter to match, has been added to the collection of traditional cozonacs.
And I'm very proud of grandma, who taught me the cozonac recipe step by step, so I never forget it.

Cozonac ingredient list:
Dough for cozonac, (dough for 2-3 cozonacs, depending on the pan):
- 1 kg flour (for cozonac), at room temperature and sifted twice for aeration;
- 20 gr dry yeast, or 50 gr fresh yeast;
- 5 egg yolks;
- 50 gr sugar (if you want a sweeter dough, you can add an extra 50, even 100 gr of sugar);
- 250 ml milk;
- 100 gr butter;
- 100 gr heavy cream;
- 100 ml sunflower oil;
- zest of one lemon;
- zest of one orange;
- 2 tablespoons rum essence;
- 1 teaspoon salt;
For roux (white roux) for cozonac:
- 100 ml milk;
- 20 gr wheat flour;
Walnut and cocoa cream ingredients for cozonac:
- 5 egg whites, beaten until stiff peaks form;
- 50 gr sugar (if you want it sweeter, you can add an extra 50, even 100 gr of sugar);
- 400-800 gr walnut kernels (2-3 cozonacs);
- 250-500 gr Turkish Delight;
- Grated zest of half an orange and lemon;
- 1-2 tablespoons rum essence;
- 2-3 tablespoons rose jam;
