Pancit Molo or Pinoy Wonton Soup is a soup that originated from Iloilo City. It is a soup consisting of ground pork wrapped in molo wrapper or wonton wrapper with shredded chicken or pork meat and shrimps.
Kung usapang soup lang naman, ito talaga ang favourite ko kaya naman gusto kong i-share sa inyo ang aming recipe na shinare lang din ng aming kapitbahay! Haha!
Very rich ang soup na ‘to dahil madaming rekados pero wag kang mag-alala dahil sobrang sulit nito!
Kailangan nga rin pala ng medyo malaking kaserola dahil marami na ang magagawang soup sa recipe natin. Pwde nyo rin naman i-divide sa kalahati yung recipe kung nararamihan kayo.
I grouped the ingredients into four and here are the ingredients:
MOLO SOUP INGREDIENTS: (13-15 servings)
I. Chicken and Pork Broth/Stock:
¼ kilo chicken breast
¼ kilo pork bones o buto-buto
100 grams pork liver
4 cups water
1 tsp. salt
½ tsp. ground black pepper
For the meat, you can choose to boil just the chicken breast or the pork bones or you can boil both just like what I did on the video. Simmer this for one hour.
The pork liver will be added later than the rest of the broth ingredients or 30 minutes before the simmering ends.
*Since the making of broth takes time, you can also prepare this in advance and keep in the refrigerator.
II. Ingredients for Sautéing:
2-3 Tbsps. oil
7-8 cloves of garlic
2 pcs. onions
boiled chicken breast, pork bones and liver (the meat we used to make the broth), shredded and cut
¼ kilo shrimp
salt and ground black pepper to taste
Make sure to set aside the shrimp heads because we can still use the shrimp head extract to flavor the soup.
You can also add carrots and cabbage if you want.
III. Ingredients for Wontons/ Siomai:
½ kilo ground pork
3-4 cloves garlic
1 onion
1 egg
1Tbsp flour or corn starch
salt and pepper to taste
1 tsp. oyster sauce (optional)
2 packs molo wrapper
IV. Ingredients for the Soup:
chicken and pork broth
12 cups water
shrimp head extract (with 2 Tbsps. added water)
1 shrimp bouillon cube (Knorr)
sautéed meat
2 Tbsps. fish sauce (or you can still add more)
salt and pepper to taste
wontons/ siomai
spring onions
The spring onions brings extra flavor so make sure you add this in your Molo Soup.
The amount of water may sound too much but the wantons will absorb liquid when they are added.
It’s better to adjust the flavors of the soup before adding the wantons to preserve the shape of the wontons while mixing.
