Ingredients:
5 Cups of baking flour
3 Teaspoon of Baking Powder
2 Cups of Granulated Sugar
1 Stick of cold butter (1/4lbs)
2 Eggs
2 Cups of Raisins
3 Cups of Shredded Sweetened Coconut
1 quart of Milk ( 2% or Whole)
3 Capful of Vanilla extract
3 Capful of Almond extract
1/2 of a grated Nutmeg
2 Capful of JWray Nephew White Overproof rum
1/2 Teaspoon Salt
Directions:
12x18 (1 inch deep) baking Pan greased with margarine
Preheat oven to 350 degrees
Place the rack in the middle of the oven
Mix flour and cold butter together (cut butter into small pieces and knead with flour until dissolved)
Add sugar and shredded coconut
Beat eggs and add 2 capfuls of rum
Add milk and stir mixture till thick and the spoon can stand up in the middle
Add beaten eggs to the mixture
Add Vanilla, Almond, Nutmeg and Salt
combine all ingredients
Taste the batter and add additional spice if needed
Spoon mixture into baking pan and spread evenly
Place in oven and bake for 45-1 hour until golden brown
Use a clean knife to check when done
Let cool before cutting
