Actually i worked on milk tankers, big ones, semi-trailer, collecting milk from farms. Food tankers don’t have baffles like diesel ones. It’s about hygiene, they can’t be cleaned properly. However we use 20%-80% rule. That’s means that you rather have 20% or less or 80% or more load. In the middle not safe do drive.

Food-grade tankers (in the U.S. at least) are smooth-bore, meaning they don't have any baffles. They have to be smooth-bore for sanitation. With baffles, there are places that bacteria can grow since they are much harder to clean. Truck drivers hauling food-grade tankers have to drive much more carefully than a driver hauling a non-food tanker which has baffles.

tank trucks are a special area- The shape of the tank does change it's behavior by a lot. Originally they were almost always circular tubes, much like the tank on the car in this video. Later they made them a bit squished, that is they are wider then they are high. This way the center of gravity is lower and the tank can actually hold a larger volume. But all is not good about this design either. If the tank isn't full the liquid sloshes from side to side, and suddenly the center of gravity can move further to the side than with the circular tube tanks. So go around a turn a bit too enthusiastically and suddenly the truck will be on it's side. To combat this they install baffles in the tanks, both along the direction of the tank and across it. This prevents the liquid from moving freely all over the tank, it doesn't make it safe to whip around corners but at least the truck a lot less likely to canter over. Oh and there has been all kinds of interesting ways that drivers has tried to steal some of the liquids. The measurements of the volume of liquid going through the pump is pretty good, so stealing anything is harder than it may appear. I know one driver who drove a truck shipping gasoline to petrol stations hung a bucket from one of the top mounted inspection hatches. Every day he emptied about 8 to 10 liters of gas from that bucket. This was exposed by the company he worked for seeing a constant loss of these 8 to 10 liters of gas, and that was from a truck that could have been filled with between thirty and forty cubic meters of gasoline. Each cubic meter is a thousand liters, so if he stole ten liters of a 30.000 liter load it was about 0.3 per mil that was missing from the deliveries.
Im glad you have your safety gear on , your hat ⛑️lol

This is why trucks with tanks have baffles in them, but they still tip over from time to time. One of my friends used to drive a tanker truck, carrying milk. I saw inside the tanks. Baffles everywhere. At the top is a “crawl” space to allow access for repairs inside the tanks.

I recall when I had a lift kit on a Hyundai Pony (similar to this Lada) 6 inches in the back. I loaded it back down to ride height with an LB1 motor, a transmission, most of my tools, and a rear axle. I was flying at 130 KM/h on the highway, and I had to make a sudden lane change to avoid traffic. Holy shit. I wrestled the car back into a lane, and yeah, the inertia WAS real. I stayed doing 95 in the right lane the rest of the way, white-knucking that bastard.
