Moroccan Shakshuka. Egg and vegetables dish for breakfast or lunch
Shakshuka is a popular and flavorful North African and Middle Eastern dish that consists of poached eggs in a spicy tomato and chili pepper sauce. Recipe:
5 eggs
2 shallots or onion
1 red pepper
1 tomato
3 cloves of garlic
½ of jalapeno pepper (or more to your taste)
3 tbsp of crushed tomatoes
2 tbsp of olive oil
Salt and pepper to taste
½ tsp cumin
1 tsp of coriander
½ tsp of cayenne pepper
1 cup cilantro
1 cup dill
How to make:
dice 1 onion into small cubes (I used 2 shallots)
dice red pepper into small cubes
dice one tomato into cubes
dice jalapeno pepper into small cubes
Heat the pan on low to medium heat
Add 2 tbsp of olive oil
Add shallots
sauté until transparent
stir occasionally
add red pepper
sauté for a couple of minutes
stir occasionally
add jalapeno pepper
sauté for a couple of minutes
stir occasionally
add tomato
sauté for a couple of minutes
stir occasionally
add 3 table spoons of crushed tomatoes
cover the pan
sauté for a couple of minutes
add salt and pepper to taste
add ½ of tsp of cumin
add 1 tsp of coriander
add ½ of tsp of cayenne pepper if you like it spicy
cover the pan
add 5 eggs
chop cilantro and dill
add to shakshuka
check the eggs
if the whites are ready and yolks are soft it’s ready
you can enjoy it with pita or flat bread
