We had this tonight and it was the best smoker meal I've had in my life haha! Lamb ribs weren't really cheap, need to shop around more but 11 out of 10 for luscious, smokey, spicy flavour!

Great vid mate. Love the channel! Hey got tip for you (you’re probably aware anyhow) When you trimmed the fat you also trimmed the selvage. It’s the thin muscle membrane outside the outside fat. It’s the most delicious substance on earth. It’s what gives the fat on loin chops the crunch. Try seasoning and grilling on high heat as a meat side. I also use it to wrap poppers instead of bacon. Oh shiite, those look so good, and loving that rub and the sauce. The 1st time I cooked them, I had no idea what I was doing (it was labelled "lamb breast"). Just did s&p & paprika in a low oven for about 6 hours (I fell asleep for a bit). They were fantastic after i broiled the top for a few.

Lamb ribs is not cheap in Norway, what can i do with that top layer of fat? Can i make a lamb tallow? anything else? wish they sold it without that top layer fat

Lamb is good, very good, but what is difficult to find is goat recipe. I only know how to do goat three different ways. Im sure there are more. Goat is better than lamb.
