Is there any particular reason why the copper wire used in this experiment is thick? Does it have anything to do with heating effects?

As a good conductor, it allows a high current to flow with little heating.

If the magnets were the other way round (reversed direction) and the cradle "lifts off", then wouldn't the field strength be negative? (As -change of mass and +change of current). But how can magnetic field strength be negative?

Is there any reason for using both a variable resistor and a variable power supply? Surely you can just use the variable power supply to change the current

You can. We use a variable resistor with a fixed power supply: Just seems to be easier to adjust for the values we want.
