Soda is necessarily added to the dough when we use a fermented milk product, fruit (vegetable) juice / puree, pieces of fruit, honey, a large amount of natural cocoa, in order to neutralize the acid contained in these products. If this is not done, then the consistency of the finished product will be dull. The lifting force from this reaction is not enough for the growth of the dough, so a leavening agent is added, since it provides the rise of the baked goods, reacting without residue in the dough.
Choose vegetable oil without a pronounced taste and smell.
Honey must be natural. Sugar can be substituted with a sweetener.
Instead of raspberries, blueberries, currants, blackberries, prunes are suitable.
Kefir can be replaced with drinking yogurt, fermented baked milk or yogurt.

Whole wheat flour - 150 g
Soda - 2 g
Baking powder - 3 g
Salt - 0.5 g
Egg - 1 piece (50-55 g without shell)
Vegetable oil - 50 g
Honey - 40 g
Sugar - 30 g
Vanilla sugar - 5 g
Kefir - 80 g
1/2 lemon zest
Raspberries - 70 g

Preparation
1. Combine whole wheat flour with a pinch of salt, baking soda and baking powder.
2. Combine natural honey with a mixture of sugar and vanilla sugar and an egg, mix.
3. Add vegetable oil and kefir of any fat content, mix until smooth.
4. Combine with flour mixture and stir.
5. Finally add the zest of half a lemon and raspberries, I use the Cumberland varieties. The berries can be fresh or straight from the freezer.
6. Line the muffin mold with paper cuffs. Fill each 3/4 of the volume.
7. Sprinkle almond petals on top, if desired.
8. Bake in an oven preheated to 160 ° C on a medium level without convection for 25-30 minutes.
9. Cool the finished muffins completely.
Note!
The baking time may differ from the one stated in the video, focus on your oven, and also take into account the material from which the form is made.
