Hello I tried your recipe tonite. While I was cooking I was so scared how's it going to turn out like because we don't eat mild food. But I did a change I added a lot of whole green chilies to the meat after it was tender and the water was all dried. It added another flavor to the recipe so it's not authentic anymore. But I'm happy with the result and I'll surely make it again. Thank you for your time to put this up.

chacha bahut hi achi authentic recipe hai....meri ammi almost ayse hi banati hai....ek toh ye bilkul shurfa recipe hai....red chilli powder ka istimaal nahi hai...aapka andaaz ye baayaan bhi bahut acha aur apna lagta hai...have tried this n big thumps up for this...being from Lucknow....this is very much close to awadh briyanai....we call it pulao....aur ek cheez muzzafar/qermami sewai Ki recipe is must ...pls share

kingofdadamed Dear brother, thank you so much for liking the recipes, I started this channel only because people were killing the authentic recipes. 1 1/2 year ago I argued to them in the comments and they told me do not give me any suggestion, we are cooking experts. Open your own channel and give people your recipes. Then some other viewers who were looking all those arguments, forced me to Upload NIHARI recipe (Argument was for the authenticity of NIHARI & PAYA). So I started with NIHARI, Authentic food lovers liked my recipe a lot and encouraged me to do more. That helped me to bring more & more. I never claimed that I am a food expert. I always say I am a food lover and want to keep Desi authentic foods Alive. I research the authentic recipes and when sure about the authenticity then I make few times so that ingredients and quantities are in balance, then I share with all. What did you do to the beef stock made while boiling meat, with few ingredients? Wont it be used later anywhere in the recipe?

Chef Imtiaz Qureshi is the best known maker of this biryani. He was born in Lucknow (Avadh) and is head chef of the ITC Maurya Sheraton Hotels in India. His family carries on the tradition of Avadhi Dum Pukt cooking. They have a restaurant in Dubai too. In Lucknow itself, there are some traditional biryani restaurants like Wahid's, Aminabad, Tulsi Gulli and Lallaji. Avadhi cuisine is influenced by the Moghlai and Persian style of cooking and is famous for its naan and kebabs too. Look it up in Wikipedia . Regards

Sir, there's a confusion - while boiling meat you added 1 tbsp of black pepper that is fine.. but then how come you AGAIN added black pepper at the time of frying it (shown in the video along with all other whole spices) coz as per list of ingredients you only used 1 tbsp of black pepper in total! Did you use more?

Good catch. Whole black pepper will be added to the meat in the beginning only. Thank you for pointing this.

Biryani aapki kaafi acchi bani sirf do teen cheezo ki kami hai varna aap lucknowi authentic biryani ke kaafi kareeb the .Lekin fir bhi aur log jo hara dhaniya Pudina aur saare spices daal kar usko Lucknowi Biryani Bolte hai unse kaafi sahi dish hai ye hai .

Delhi-UP-Karachi-Khaane Sir ji you nailed it. Very close to lko biryani. Its a pity that in the name of biryani people selling rice-full of masala. What you have presented is a delicate mix of spices. SUPERB..I have been searching for long time. Your video needs to be popular more than the shitty biryani people making on utube.

Alo Bukhara can be used in Masaleh Wali biryani like sindhi biryani or Karach style Biryani, while Kaju is used in south indian biryanies or Gujrat style biryani.

I tried the recipe for lunch, few details I observed: for cooking meat what is the recommended portion of ginger, garlic and cloves; also with rice bay leaves? I'm seeing in the end if you leave all the spices with the rice for final dum, their aroma over powers each other killing the final flavor of the Biryani. Is it recommended to take out the masalas from the rice? Also I did use the left over cooking mutton water to make rice as well. Somehow garlic and cloves overpower the aroma of the biryani "..."

Amit Singh I understand the things you observed. This recipe, ingredients and the quantities are on the basis of taste and aroma of most people like. So some people still can feel less aroma and less spices, so they can increase the quantity of the spices. Similarly if you feel stronger aroma and taste than normal, then you can decrease respectively.

Normal quantities Cloves: 25, Ginger paste: 3 Tbsp and garlic paste: 2 tbsp. For you try with 15 cloves and GP: 2 tbsp and GP; 1 Tbsp.

I made a mistake of leaving the recommended rice masala in, while layering for dum. So as result, bay leave, Anise and probably clove along with garlic from the mutton made the flavor slight pungent. In the next try, I will keep an alarm on spice interaction of rice and mutton stew flavor...
