In today`s video we are making my favorite type of Mukimo :).
Mukimo is a delicious potato mash with a bunch of ingredients which can be customized to your liking. In this recipe I will be using these
INGREDIENTS;
1 Kg of Peeled Potatoes
2 big bunches of Pumpkin Leaves
2 Soft Maize combs
1 Red Onion
Salt to taste
3-4 Tbs of Cooking oil
Serves 5 Decent Portions
* TIPS*
Greens: You can always substitute the pumpkin leaves with spinach or green peas.
This may change the taste slightly.
Potatoes: Do not over boil the potatoes. They may become too soft/watery for mashing giving you a runny mukimo. You need the potatoes perfectly cooked and soft.
Remember to drain the water into a bowl you might need the soup when mashing @3:18 to achieve the perfect consistency.
Onions: Cook the onions until completely brown (almost like they are burning) to give your Mukimo a nice taste to it.
I served the Mukimo with pan fried chicken which I had marinated in honey, garlic and thyme with a sweet honey and garlic sauce. It goes well with beef stew, chicken ,pork or goat meat stew too.
