Instructions:
Make the Masala: Heat oil in a pan, add cumin seeds and let them sizzle. Sauté onions until golden brown. Add ginger-garlic paste and green chilli (if using) and cook until fragrant.
Add capsicum (if using) and tomatoes, cook until softened.
Stir in Pav Bhaji Masala, chilli powder, and salt. Cook for a few minutes.
Add a little water and simmer the masala until it thickens slightly. You can mash some of the vegetables for a smoother texture.
Garnish with chopped coriander leaves.
Toast the Pav: Heat butter on a tawa (griddle) and toast the pav buns until golden brown on both sides.
Assemble: To serve, spread some masala on the toasted pav buns. You can also add some butter or chutney for extra flavor. Enjoy hot!
Tips:
You can adjust the spice level of the masala to your preference.
Add other vegetables like potatoes, peas, or cauliflower for a more filling dish.
Use a pre-made Pav Bhaji Masala powder to save time.
Serve with chopped onions and coriander leaves for garnish.
