After watching an episode about Korean street food on Netflix's series "street food", I was intrigued by the mung bean pancakes (also known as Bindaetteok) introduced in the show. So I tried to make it at home, it turned out to be super delicious, I think this would become my new favourite mung bean recipe!!
🧅 Ingredients (for 2 medium pancakes)
Mung beans (skin removed) 100g
Water 25g
Salt 1/2 tsp
Pepper 1/4 tsp
Bean Sprouts 100g
Spring onion 2
Soy sauce 2 tbsps
Rice vinegar 1/2 tbsp
Garlic clove 1
Chilli 1
🍳 Methods
1. Soak mung beans for 8 hours or overnight.
2. Prepare the dipping sauce: slice garlic cloves, and cut chilli into small pieces, put them in a small bowl together with soy sauce and vinegar.
3. Blend the soaked beans with salt, pepper and water in a high-speed blender, until it becomes a paste.
4. Mix the green paste with bean sprouts and roughly chopped spring onions.
5. Add some vegetable oil on a flat pan, spread the batter into a round pancake shape with a spatula, shallow fry with medium-high heat until golden brown, turn it over, and cooke the other side.
6. Place the pancakes on kitchen paper to absorb any excess oil. Cut the pancake into smaller pieces, and serve it with the dipping sauce prepared.
