Is it possible to completely omit alcohol from the recipe? I just saw this in a book that is not about cooking, but apparently the alcohol is used while frying to get rid of the smell the barley produced when it’s soaked in water, so is there another way I could get rid of the smell?

Yes you can omit the alcohol totally. No that is not true - Wine is used in many italian dishes to add flavour and it’s part of the italian culinary culture. Anyways risotto is usually made with Italian Arborio rice and they use wine there. However, I have made this barley risotto many times without wine and it is as delicious. The mushrooms have a lovely flavour and there is no smell of barley at all. Enjoy and do let me know if you tried it :)

Hi Natasha, I have problems with butter, can I use greek yogurt with parmesan for creamy effect and olive oil with onions? If not, what would you recommend. Love your presentation. e

Hey Suzanne, thanks so much 😀 just skip the butter and it will taste as good and creamy. I do not suggest adding Greek yogurt as that will change the taste.

One important consideration is that pearl barley is very low on the glycemic index. It's recommended for diabetic diets. In other words it's hard to get fat from eating pearled barley because it releases its glycogen very slowly for energy over a long period. In ayurvedic and Chinese medicine it also clears dampness from the body which contributes to many ailments. It's ideal for people who live in humid or damp climates. The English even have a barley tonic that they spoon feed their children historically. Interesting correlation. Guilt-free carbs! 😊

Rather than adding water, why not add a mushroom stock? Simple to make. Pot full of diced and a packet full of dried mushrooms (the more varieties the merrier) and just boil these puppies into oblivion. Strain and use rather than the boiling water shown here. Flavour will be astronomically better. We are always told "DON'T WASH MUSHROOMS" [false, just dry them after washing], but use that belief that the mushrooms flavour compounds can dissolve into water and let rip.
