Quick breakdown of how I do tempura at home. In the video I use a small pot with only two cups of oil. You can reuse the oil after cooking a few times too, just strain it. Lots of different mushrooms and other ingredients you can use and there's a few examples on the post linked above. You can do this with morels, just make sure to cook them longer than other mushrooms.
I riff on the classic Tentsuyu tempura dipping sauce a little switching maple syrup for the white sugar. It's also the perfect place to use some of my fermented ramp soy if you have some. If you haven't made that, it's crazy good.
