As an italian, I have a little tip for you to prevent the basil to oxide and to keep the pesto of a bright green: add one or two ice cubes while blending it! We always use this quick method instead of blanching it, guaranteed results 🤞🏼♥️

If you are using walnuts instead of pine nuts.. add a pinch of ground rosemary or fresh rosemary to add the pineness back into the pesto :)

I always substitute pine nuts for sunflower seeds :) it‘s a lot cheaper and tastest just as good (its amazing to toast them first)

Pesto is my favorite sauce, and easily the most versatile (imo) out there! I haven't made classic pesto in such a long time (experimenting gets in the way😂), but I was lucky enough to spend some time with my mom last night and made one together to put over some fava beans and sweet potato pasta. I always love seeing other pesto variations , these look amazing!!😋

So I was loathe to add nutritional yeast to $5 of basil, $3 of pine nuts and some very nice extra virgin olive oil... but I have great faith in Nisha and... it was so GOOD! I add it every time now. Really wonderful nutty richness without parm. Thank you Nisha.

I add carrot tops to pesto or palak paneer (tofu) all the time! Another great way to use it is to juice it with lemon and ginger and serve over ice with agave. It makes a delicious summer drink. Love this video!

I wish I could get this much basil yearround, but just during the summer from the farmers market. I love using other herbs like cilantro or parsley for pesto when basil is not in season!

I just made pesto from the basil leaves I grow on my balcony and i followed you guidelines and it was sooooooo good!! I put parmesan instead of nutritional yeast because I’m not vegan but it was spectacular!!! So much better than any pesto sauce I ever bought! Thank you for this! 🌸🥰

If you add a bit of water when you fine-blend the pine nuts with the lemon and salt they will fluff up and you won't get that runny texture to your pesto. The oil will then blend into the emulsion making a rich thick paste.

Honestly, carrot top pesto is one of my faves. However, I have never thought of using pistachios in it! I will have to give it a try as the flavours seem fantastic, and I have a lot of carrots growing in the garden :D . Anyways, sending you lots of love! I have made great changes to my diet and have loat some 6 kg. That wasn't too hard, though, since my previous diet was literal garbage. If I told you what it was, you'd think I was suicidal haha Now, the pesto was STELLARRRRRR. I still share pics of when I made it with new people I meet and am hoping to make it again sometime soon 😁 I probably didn't really answer your question, but feel free to ask anything again haha I will try harder to answer well Or we can just talk about anything else that has to do with diet and/or food haha

Thank you Elaine! That's so nice to hear that :) I've never experienced pine mouth - it sounds like it affects only a small number of people. But, you could also make the classic version with walnuts or pistachios, I do that all the time.
