I love interest only. I have all my mortgages on interest only but have calculated the p+I repayment amounts, I then pay that amount into my overdrawn flexi facility. That way I get the benefit of paying down but still have access to the cash and can stop anytime if I need the cashflow. If the flexi fills right up or overflows I use the excess to put lump sums on whichever mortgage is about to roll over

One issue I have struck is that my most recent loans I refinanced into with a certain bank have only given me a 2 year interest only period, as opposed to five. I’m worried they won’t extend it to 5 when I get there (end of this year) and I’ll struggle to refinance to another bank as the service rate has lifted so much over this period
