Mutton Biryani / Hyderabadi Pakki Akhni Ki Mutton Dum Biryani is a tasty combination of mutton, rice and various spices mixed together to give an aromatic ,divine dish called biryani.
Do try this mutton biryani which is explained in an easy and simple way.
1.FIRST STEP
----------------------
Basmati rice - 750 gram
Wash rice properly and soak it for1 hour in enough water.
2.SECOND STEP
---------------------------
Mutton - 750 gram
Lets marinate it.The ingredients required are
Yogurt - 200 gram
Red chilli powder - 1 and 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Lemon juice - 1 tablespoon
Garam masala powder - 1 teaspoon
Coriander powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Black pepper powder - 1/2 teaspoon
Salt - 1 and 1/2 teaspoon
Ginger garlic paste - 2 tablespoon
Mix them well and marinate for 1 hour
3.THIRD STEP
-----------------------
Preparing the mutton gravy (akhni)
In a bowl add oil and heat - 250 ml
Add cardamom - 5
Star anise - 1
Cloves - 6
Black cardamom - 1
Cinnamon sticks - 3
Fry for 10 seconds
Then add - 3 onions finely cut
Fry them till golden brown.
Then add ginger garlic paste - 3 tablespoon and fry it
Add the marinated mutton and cook till it becomes tender.
Add coriander and mint leaves - few
Green chillies - 5
4.RICE PREPARATION
-----------------------------------
In a big bowl add 2 to 3 litres of water, to it add
Salt - 3 teaspoon
Oil - 1 tablespoon
Bay leaves - 3
Few mint and coriander leaves
Caraway seeds - 1/2 teaspoon
Let this water boil...when it boils add the soaked rice and cook till rice is 80% done.
Drain the excess water from the rice.
5.LAYERING AND GARNISHING

In a pan place a layer of rice then a layer of mutton gravy..continue it in the same way.
On the rice layer garnish it with coriander leaves,mint leaves,fried onion,fried cashews,
food colour,saffron milk and clarified butter.
6.DUM (Cooking under low flame for long time)
---------------------------------------------------------------------------
Take an old tawa or pan on it place the biryani vessel and cook it under low
flame for 30 minutes.
7.BIRYANI IS READY

Serve hot with yogurt chutney and brinjal curry
