Ingredients:
• Mutton
• Basmati Rice
• Onions
• Yogurt
• Ginger
• Garlic
• Whole Spices (Cinnamon, Cardamom, Cloves)
• Bay Leaves
• Saffron
• Fresh Mint Leaves
• Ghee (Clarified Butter)
Instructions:
1. Prepare yakhni by boiling mutton with whole spices, onions, ginger, and garlic until tender. Strain and reserve the yakhni (broth).
2. Heat ghee in a large pot and sauté onions until golden brown.
3. Add marinated mutton and cook until browned.
4. Add strained yakhni and bring to a boil.
5. Add soaked basmati rice and cook until almost done.
6. Sprinkle saffron-infused milk and fresh mint leaves on top.
7. Cover and simmer on low heat until rice is fully cooked and flavors meld.
8. Serve hot with raita or salad.
