My smoker still has that bad pork smell to it lol lesson learned, leaving frozen ribs on top of the freezer overnight to defrost is a terrible idea. I had some rough smelling baby backs a few weeks ago and after some intense research, I ran them under some cool water and that seemed to help out a lot! No bad taste or anything!

Was a huge bummer for me, I hadn't eaten all day and those ribs looked so good 🥲 yeah love the pecos, looking forward to you releasing your next video on it 👀 tried a new style with this where I'm just cooking and talking and seems like people are liking it so might stick with it for a while. Plus it's way easier to plan and edit haha

We had the same experience last fall with a 3 rack pack of baby backs from Costco. The smell was off putting. We even rinsed them twice. From now on if smells bad I'm not cooking it.

I was looking at the amount of purge in the package and was wondering about the smell. I know they say not to rinse the meat but I had some bad smelling baby backs and I wish I had rinse them. My thinking is that all of that "blood" is what the smell is from. I may be wrong though. --- Just got to the end where you said they had a bad taste. Ick sounds like they were bad. Sorry man, that sucks!

Yeah I left them out from frozen over night and I think they just went bad. The fat is usually sweet on the rib, but it tasted really bad. Maybe if I rinsed them like you suggested it may have been ok, but I'll never know now haha

Costco ribs homie. Less than $10 per rack already trimmed up. No waste. They come in a 3 pack.

i like those! they are great and better quality than walmart on average. but they cut off the rib tips on the costco racks :( wish they sold them as full spares. But I usually have a costco 3 pack stocked up in the freezer at all times lol

The ribs sure looked good even if they would kill someone 😂 Good tip on that piece of meat on the end. Never noticed that. That same company also sells granulated honey. It’s much better for rub than the powder. Jeremy had some at his class. I also bought some and it’s amazing!

thanks for the tip, James! I'll have to pick some of that up once I use this entire jar of powder lol I thought the bark looked fine using the powder, but the granulated has to be 100 times easier to apply. The powder was so fine, I felt like I was in a lab trying to coat these rancid ribs haha

@@AntsBBQCookout lol ya it’s more for easy application for sure. I learned about “powder” the hard way. My wife brought home powdered garlic instead of granulated from Sam’s and it seems like it could disappear into thin air lol. Sucks about the ribs man. That was the perfect rib bark for me!

If your ribs are anything but fresh smelling, take them back to the store. Glad you didn't eat them. I've rinsed them before and it does help but nothing is worth getting sick from food that shouldn't have been sold to you. Fantastic color and I enjoy watching you cook!!

If it smelled like sulfur, that should be normal. It has to do with the cryovac packaging.

It smelled like a much stronger version of what I usually smell with ribs and also a bit sulfuric like your saying. The problem was when I bit it. The fat usually has a sweet rich taste, but it was almost sour tasting and flat 🥲

aw man! that sucks about the bad ribs, they looked great too! it's normal to have a little funk after opening the cryovac but the smell should quickly go away by itself after a couple of seconds. if it doesn't go away, then it's probably bad meat. we all been there unfortunately lol

All ribs that are packaged in water most of them come out smelling, I usually have that problem in baby back ribs from swifting company Costco if you just wash it real good you wash the blood and the water off, the smell comes off after a good washing and they've been fine after that for me

I also buy the same ribs at walmart. 50% of them smell horrible. Like a dirty diaper! That's so funny you mentioned that. I always wondered if it was just my Walmart selling expired meat. I'm starting to think it's just kind of normal. As the ribs always turn out fine

I have a little trick for slicing ribs, I’ll lift the rack slight on one side and slice along the bone as a guide so that I don’t struggle trying to find where to cut and all the meat is left to one side of the rib making it look meatier.

Have u had luck cooking with it with the stock baffle in place and stock stack? Getting a brazos and really dont want to do any mods. Any tips?

The baffle makes it really hard because it puts a Hotspot right in the middle of the smoker. You can just get the brazos g2. It has a longer stack and a removable baffle. Also has a much bigger fire box and it's insulated (not sure if fully or semi insulated)

Brazos is solid, Jeremy (mad scientist) loves his. I havent tried the g2 so cant recommend it over the brazos. Just brought it up since it comes as is with no mods needed. Yeah take out the baffle though if you stick with the brazos. This Wednesday I'll have a video with my pecos vs the goldees offset. Brazos is a little bigger but it'll give you a good look at what your brisket will look like

@@AntsBBQCookout man we all take an L sometimes bro but damn, I hate that. This video actually hit a lil different beings my son called me 2 days ago asking about some ribs he was cooking. Said they smelled funny straight out of the cryovac. I said if it smells bad don't eat it. Your nose is the first defense you have on spoiled meat. Although pork can have a strong smell at times it can be misleading.
