We got our first Traeger the year they hit the market. We're on number four now, having passed down to the kids each time we buy a new and bigger one. We also have three other smokers but the Traeger is our favorite. I can't believe that is your first brisket, you did an amazing job. Won't tell you about my first one. A couple of suggestions, when I wrap I smear the brisket with homemade beef tallow. I also put it in the oven once it's wrapped since it won't absorb any more smoke. Not wasting pellets and easier to handle inside than out in the weather at times. Don't be afraid to cook way ahead of time, it can sit in the cooler for HOURS and it will just get better. I cook at 225, put it on about 9PM and then wrap around 6AM. Put it in the cooler when it's done. You usually can't time brisket, you just cook until it's like butter. I throw it in the cooler and serve it whenever, many times it's six hours. Another suggestion. Put some of your homemade tallow in a baking dish and every time you some something put the baking dish in the smoker. That will give you a supply of smoked tallow to use in many different dishes. YUM!

My husband smokes a lot of beef brisket! He researched Franklin's Texas BBQ process for many years... The owner Aaron Franklin! He's got some great books out. But for years now that's how he smokes our brisket. Franklin style is what we call it! The bark on it is to die for! And the brisket melts in your mouth like butter. It's the most amazing brisket I've ever had. However, we don't have a traeger, we have an electric smoker but love some brisket! Your brisket looks delish! One thing my husband does. After he wraps it with the parchment...., He also wraps with a beach towel when he removes it to rest. Check out Aaron! Franklin's books they're great!

Hi Anita... I have never had brisket in my life... I saw those large briskets at Costco when I got the beef loins last week. I may get one next time though I don't have a smoker or a barbeque. I have just heard of brisket for years... same with Pork belly, I have never had that either. Thankfully there are new things to try out on Carnivore. Oh my gosh by the time you are slicing, my mouth is actually watering... but then it's 5:20 PM and I haven't eaten anything today. It's making me want to get a smoker now... :) Thanks Anita...

I have other brisket videos where I use the oven and also slow cooker! In the past I have taken my whole Costco brisket and cut down into more manageable 4-5 pieces. Then I can fit a piece in the slow cooker and freeze the rest. If you have an air fryer do try the pork belly from costco and make my pork belly bites!

@@KetogenicWoman Thanks Anita. Yes I have the same kind of Ninja air fryer that you have as well as a Cosori. I use the Cosori the most as the Ninja is so hard to clean in the lid part. I have two slow cookers one small and one big. I will be trying both the brisket and the pork belly for sure.

My 21 pound brisket us thawing out for its ceremonial trip into the smoker to celebrate my 1 year carniverssary on October 1. I'm a Texan and make ONLY Texas style brisket. I was so proud of you for properly wrapping your brisket in our traditional pink bbq wrap. This looks absolutely marvelous, juicy and the only thing missing are the best part...burnt ends! For your first time it turned out pretty. We mostly use Post Oak and rarely trim that much fat off. It bastes the meat and melts into the meat. The BEST bbq houses only use salt and pepper so the neat shines thru.resting in the cookee is a CRITICAL step and I was glad to see you did that.

Great job for your first brisket! A couple tips for your next one spray the paper before you place the brisket when wrapping it, you can use apple cider vinegar or if you cant have that use tallow. 2nd tip keep the brisket fat side up even after wrapping, thats your "presentation side" that will also keep your bark safe

Great job Anita!! Im proud of you!!! What I do is…wrap in the butcher paper or parchment paper then wrap with foil. It holds in the juices better. Also sometimes i put it in the oven after the paper wrap because it seems like a waste of pellets since it’s not really getting smoked at this point.

We have a special cutting board for our brisket that we use. Special as in just for brisket, it's really big and it has the intention for juices around the outer edge. And we carve it up! Being carnivore we weigh it up into 1 lb servings with Couple tablespoons of butter. Then we wrap It really tight twice with tin foil and then we freeze each one. When we want dinner We take it out of the freezer, leaving it wrapped. We throw it right into the oven until it's done at 350 for about 40 minutes. It's amazing even after a month. Tastes like it just came out of the smoker

I actually Stack them all into a container, something to keep it from getting damaged and moved around while in the freezer because you don’t wanna get tears/holes. Nothing would be worse than cooking & the juices/butter squeezing out all over your oven.. It would be a disaster!

I just sliced up (on the diagonal) my 3.01 lb corned beef brisket that I made in my toaster oven of all things! I cooked low and slowly, all wrapped up in foil and in a foil pan, too! It came out perfect and just having some with some stone ground mustard! Your brisket looks amazing and, I'm sure you enjoyed this. Save some bits for some scrambled eggs too! 🙌~Beth in FL 🌴

My husband bought a smoker at an estate sale. Changed our lives. I like your spice combination the best. I’m with you on the pepper but have never tried white pepper. From my understanding, burnt ends are the fatty cuts from the point, not the flat .... & they aren't just the end cuts. Often cut into bite size pieces & placed back in smoker for more flavouring.

You did a great job! Your brisket looks fabulous. I wanted to jump through my monitor to get to it! lol! I used to smoke so many meats, especially salmon, as we fished for them ever year consistently. They were so good! Brisket, too. I cut slits in my brisket and put garlic cloves in and even though I'm doing carnivore, I still do that with chuck roasts and pork. Every christmas I smoked a few chickens, even though I made a turkey (we had six boys!) I never remove silvers skin. I go ahead and leave it on because it's a great source of collagen. I know a lot of people remove that from the back side of pork ribs, for example, but I peel and eat it. It's good too! Thank you for all the hard work you do. Your first brisket experience turned out perfectly! I didn't expact less!

Did you have to add smoke chips during the long cook time??? I would think so. I have a Ninja Woodfire Grill, which is an outdoor grill/smoker. Haven’t tried brisket yet. I have smoked chicken wings, pork chops, chicken thighs and some other proteins. I only cook with smoker wood pellets. I use Traeger brand. With the Ninja you don’t get a smoke ring but it does get Smokey and it tastes great. It is also an air fryer, oven dehydrator, and it has a grill setting, smoker setting and griddle.

Yes there is a pellet hopper and you do have check it every 3 hours or so to see how it's doing! I use the traeger wood pellets.

Looks like you did fine. That Traeger is pretty easy and foolproof. Try doing this having to add new charcoal every 2 or so hours! That's why I tend not to do brisket. Your rub is a little lackluster, of course, but you have sensitivities - so it's okay. Still, what spices and herbs are you okay with? Push out a little more - add at least one or two more things and see if it improves it. You can always try a rub on a small rack of pork ribs first so you're not committing something you may not end up liking much to 30 lbs of meat. I couldn't tell what kind of smoke you went with. Mesquite I hope, for Texas brisket. Makes a giant difference. I like mesquite for beef and sometimes chicken. I do like hickory for pork. Some find it too strong, but I don't know what's wrong with them folks! ;) Some go crazy over fruit woods, pecan and so on ... meh. I find them weak and boring, tbh, but to each their own. Alder is perfect for smoked fish, like salmon or trout. Oak is a perfectly okay fallback. I don't think it's very standout, but also nothing wrong with it. Probably good for pretty much any meat.

I am so proud of you for doing a brisket! Nothing better than a smoked brisket. Been eating these Tx style briskets for 67 years with my dad growing up with a direct heat brick fire pit (he built). We always cook ours fat side up throughout the entire cook whether we wrap or not. Fat side down seemed to come into fashion when competition BBQ really got popular. Most pitmasters that are not doing competition ALWAYS cook fat side up. One of my only cheats Texas twinkies and armadillo eggs (I'll leave a link, just do a search on the channel). I use leftover brisket (finely chopped) in SMOKED cream cheese stuffed into a Jalapeno wrapped with 2 slices bacon, or wrapped in sausage and then bacon. We have a Traeger, Webber, and Ninja Outdoor Woodfired grill, love all 3, I figure if fire cooking was good for our ancestors, it is good enough for me. FYI: I use salt, white pepper and garlic (1 part salt, 2 parts pepper, 1/2 part garlic powder) and my bark comes out just fine. It was a whole brisket which is two overlapping pieces of muscle with the grains going in different directions which is why it can be confusing to slice. The end with the seam of fat is called the point and the other end where the leaner meat is is called the flat.

How did you cook it? Maybe you found it too fatty because of the way you prepared it. We do brisket in our traeger, but I think low and slow on the bbq or in your oven might work too. Or try @gladysobrien's idea - beef stew in a slow cooker. Jerky won't work: as @cynthiagilbreth1352 said, wayyy too fatty.

The paper stuck because you trimmed off too much fat. And your paper was really dry when you took it out of the smoker. Ut is usually throughly fat soaked and the temp at the end should have been 200 for the last 3 hours.

I am hunting a product. I think I saw you use which was bone broth in individual packets. I went back trying to look for the video and I can’t locate it. I can’t find anything on your Amazon store regarding bone broth packets. Thanks for any help. 👵🏻

why do you cut off so much fat? isnt fat good on carnivore?

Yes fat is good on carnivore but if there's to much fat it won't render and if that happens it gives the brisket a unfavorable taste and consistency

yes, and believe me there was still plenty of fat in this brisket! The perfect brisket needs lots of fat but not too much as @garykuchan8371 mentioned. Plus I get to make tallow and air fried trimmings or stew from what I cut off!
