This looks so good! I make something similar but use eggplant. I bake the eggplant first In The oven to dry it out a little bc eggplant has so much water in it. Then layer it with beef and instead of the ricotta mix I use mozzarella cheese. It’s like a cross between a eggplant lasagna and eggplant parm.

I had so many zucchini from my garden I started making zucchini lasagna.... You can also make zucchini boats, cut them in half, scoop them out, stuff them with marinara and ground beef, top with cheese and bake!

I absolutely love your channel Autumn!! Never miss an episode! But, with respect, that is NOT lasagna. Try this one sometime. It's still putzy, but I think you'll like the overall texture better if you season and blister the (slightly thicker) zucchini slices first, and incorporate thinner layers, more like traditional lasagna ... Zucchini Lasagna : 3-4 Medium zucchini or summer squash 2 lbs. Ground beef and/or Italian sausage Italian seasonings: basil, oregano, fennel, red pepper, etc. 6 cloves of garlic, minced 1/2 c. Tomato paste 15 oz. Tomato sauce (no sugar added) 15 oz. Cottage cheese (or ricotta cheese) Garlic powder Salt and fresh-ground black pepper 1 Egg 1-1 1/2 c. Parmesan and/or Romano, shredded Mozzarella, sliced thin (enough to cover two layers + some shredded for topping) (Optional) 3-4 Lasagna noodles, lightly softened in warm water Slice the zucchini lengthwise into 1/8"-1/4" thick slices. Salt slices, then place in a colander to drain for at least an hour. Add the ground beef and/or sausage to a large skillet over medium heat. Brown meat, stirring often and breaking up with a spoon. Season to taste with salt, pepper, and Italian seasonings. Add minced garlic and cook until softened. Stir in tomato paste and sauce, simmer until well combined. Pat the zucchini slices dry with paper towel, season lightly with Italian seasoning, and spray or drizzle with avocado oil. DO NOT skip this step: Lightly brown/blister zucchini slices on both sides in either an air fryer or a very hot skillet, in batches if needed. Set aside. Preheat oven to 425°F. To the bowl of a food processor, add cottage cheese or ricotta, garlic powder, Italian seasoning (or a Tbsp. of basil garlic pesto if you have it), egg, salt, and pepper to taste. Place the lasagna noodles in a single layer at the bottom of a medium-sized baking dish. (These nicely soak up any excess liquid in the finished lasagna, but are not necessary.) Next, spread a thin layer of meat sauce. Over the meat sauce, add a single layer of zucchini slices. Top the zucchini with 1/2 of the cottage cheese mixture, then sprinkle generously with shredded Parmesan/Romano. Next, add a layer of mozzarella slices. Top that layer with 1/2 of the remaining meat sauce. Repeat layers: zucchini, cottage cheese mixture, shredded Parm, mozzarella slices, and then meat sauce. Cover and bake for approx. 1 hr. Uncover, top with a layer of shredded mozz, Parm, and/or Romano, and bake 15 min. more, or until top is golden brown. Rest 30 min. to an hour before serving.

HI Autumn, I made your lasagna today and it was delicious. I didn't have cannellini beans so I substitute with garbanzo that I had in hand, I also added fresh basil and will definitely do this one again. Thank you

I actually made this a few days ago, but since I can't have tomatoes, I modified a bechamel sauce recipe to make it thicker and added Italian herbs and garlic. So yummy! I did make a mistake with the zucchini, though. I used a gigantic one and sliced it too thick. I also should have peeled it. The skin gets hard on the really big ones. I ended up cooking it longer and ate it with the zucchini 'a la dente'. It's a great meal prep meal for one or two people to have a few days, too.

I'm not in CA so ground lamb is very expensive but in one grocery store where I live in upstate NY and Restaurant Depot. I don't have Costco nor Whole Foods by me but I'd be surprised if they don't have it Don't listen to the bullsh****t from USDA of saturated fats. Lamb has very Good fat in it no higher in saturated fat really to beef

Okay this was actually really good. I haven't tried any other recipes you have yet because I was a little skeptical about how it would actually taste. There are so many healthy alternatives that don't actually taste like what it's supposed to be or even near it. This was actually pretty damn close. I like how this new word emerged after years of Autumn making videos. "Downscription blow". :D This looks like a great recipe. We grow a vegetable here in Russia which is a type of squash very similar to zucchini called "kabachok" and they are massive and it's hard to find uses for them. This recipe would be a really great addition to our staples and help us use a lot of this vegetable.

You are such a foodie 😆 I’m all for trying new recipes but my lasagne nerve is making my eye twitch haha Interesting seeing neither the sauce base or béchamel cheese not being cooked at all until it’s in the oven. Not to mention the red wine 🍷 You know, 1 for the pot, 2 for the chef 😁 The basil! Poor Basil lol

I am not gluten intolerant, yet I prefer zucchini pasta and cauliflower rice over the usual ones. Autumn, may I ask you which parts of ground beef do you opt for?
