🥣 Ingredients:
🥣 Tofu “egg” ingredients:
7oz | 200g extra firm tofu (pressed for at least 10 minutes).
2tbsp nutritional yeast.
1/4tsp onion powder.
1/2tsp garlic powder.
pepper and salt to taste.
5fl oz | 150ml milk.
1 onion, chopped
3 cloves of garlic, minced+ olive oil
1 red bell pepper
150g | 1 cup cooked chickpeas
14oz | 400g | 1 can tomatoes puree
1tsp ground cumin
1/2tsp chilli powder
1tbsp sugar
salt
garnish:
chopped parsley
🥣 Method:
- Saute garlic and onion, add bell pepper and chickpeas
- Add 14oz | 400g | 1 can tomato puree
- Add ground cumin, chilli powder, salt and sugar
- Stir well and cook with the lid on over medium heat for about 5 minutes
- Add tofu mixture ingredients to the food processor, blend until smooth
- Scoop in your tofu mixture, cook over medium heat with the lid on for about 8 minutes
Take the lid off and cook for another 8 minutes or until the tofu mixture is set
- Add parsley
- Remove from heat
