This reminds me so much of my Aunt Kumcha who's Korean. As kids she taught us how to wash the veggies and help her with prep of the kimchi. It would take 2 days to get everything together but when she was finished we would eat rice and kimchi and everything else she made. Oh my goodness, those were such happy times. ❤❤❤

I can always appreciate the cleanliness involved in korean cooking. For Koreans, cleanliness is important for longevity and improved digestion. When I learned, my mother in law taught me and I can't tell you enough how special you are that you learned from your aunt. ❤❤❤ I'm glad you realize how special you are to have the chance too

She's awesome all of the recipes I've used as a reference for kimchi don't tell you to use the butts of the veggies to put in the brine, it adds tons of extra liquid and flavor and the extra brine in old kimchi is like the most sought after leftover for korean dishes. Like why are you throwing it away just don't eat it later lol

Sensitive to fermented products? If yes, make it in a small batch and try to eat it fresh like a salad, if the garlic and onion are overwhelming, reduce and add sesame oil to taste!
