When I first saw that Alex is doing a croissant series, don’t be offended by this, but I wasn’t thatttt excited. Because so many other amazing food KZitemrs have already showed great techniques on their croissant videos. But thennnn Alex just took this croissant series on a tangent, took it to a whole nother level. Shouldn’t have doubted for one second that you would make great, original content :D

We didn't get to see the croissant you made baked though. One of the satisfying things of your vids are that you usually end up making food with whatever you did in the video. I wanted to see if the inside of that croissant looked the same as the on in the bakery.

For about 10 croissants : (metric system) 500g of flour 300ml of milk 50g of sugar 12g of salt 15g of fresh yeast (You have to dilute the yeast with the milk. The milk has to be at a temperature of 25°C to activate the yeast.) 190g of butter (for the turning) Egg yolk and/or milk to glaze before baking

me and my step father have been planning to build a dough sheeter for years, not only for croissant but for bread making in general, this one looks like the perfect one for us, but he doesn't speak any English or French so HERE COME SPANISH SUBTITLES. The only change is that we'll probably do the gears by hand and use a handle instead of a drill

1) You've been watching to many videos from "This Old Tony". 2) The dough was far thicker than 4 MM. It looked to be about 9 MM unless you have really tiny hands. 3) I love you presentation and the energy you display.

Hy Alex. I learnd backer many jears ago. I rolled the laminated dough with a big hand-roller. This was hard work. The laminating-butter was to expensive for my boss, so we put the butter in the kneeding mashine and put some weetflour in. That bounds the water in the butter and you get good results with that method too. What is importend for laminated dough is, that the dough and the butter have the same consistency at the same Temprature. If this is not the case, the softer layer will be pushed to the outside and your layers will be poor and uneaven.

If you want a straight roller and axis, you put a rod through and through, then you put that roller with the rod on a lathe, attached on both ends, and you machine the wood so that it's completely straight. En français : tu perces de part en part le bois avec une tige en métal, tu mets cette tige et le bois sur un tour, et tu usines le bois, ça va être parfaitement droit.

I love that you made three gear wheels and put them in the contraption, even though no wheels would do the job. Could've powered the roller directly from the drilling machine but that wouldn't make the video as interesting and wouldn't require any imagination. This is what this channel is all about, finding new boundaries, new ways, new territories. I love it. So honest, so optimistic, exposing the best quality of human mind through cooking. If you didn't already, stretching the dough before rolling allows you to get an extra 'roll' or 'layer'.

If ToT isn’t t going to comment I will. The table needs to be supported on both ends. It rocks when you move it and that affects how the rollers perform. That is why you were having difficulty keeping the dough in a rectangle. The table itself should be wrapped in a clean muslin or cotton sheet that has been powdered in flour. That really improves texture and roller performance especially with soft doughs. “You cannot buy this beurre in a store”. Damn patissier. Let the hunt begin.

Dough Sheeter 3.0 should have a little electric motor and two limit switches to make it go back and forth with just a simple switch turning it on. Doesn't have to be like the big pro one, but just something simple where you power it, it bounces back and forth, turn off, adjust, turn on. Amazing series though, using ingenuity to overcome hurdles. And make amazing croissants in the process. Keep up the awesome videos!
